Okay so honestly I really don't remember ever having meatballs, I remember spaghetti with meat-sauce, but I found this in Mom's box. Maybe it's because originally it was meatballs with a white sauce (I'm sure Dad would have loved that).
We love these and probably eat them twice a month.
Meatballs (without white sauce)
1/2 cup whole wheat bread crumbs
1/3 cup milk
1 finely chopped onion
butter or olive oil
1 lb ground buffalo
1 egg
2 tsp salt
1/2 tsp pepper
Saute the onion in olive oil or butter. Mix all the other ingredients, add onions once they are softened. Roll into meatballs and then brown in more olive oil or butter.
I serve with whole wheat spaghetti and Emeril's Viva Las Vegas Tomato Sauce!

The Recipe and Tribute
A few weeks ago one of my college friends was telling me she made my Mom's brownies for her family and how much they loved them, which made me think about all the great recipes I have and need to make more often. Yesterday we had cherry pie squares (for the first time) and they were a huge hit. So as a tribute to my Mom, here's the recipe, they probably go with anything you are having for dinner.
"Mom's Cherry Pie Squares"
1 cup butter, softened
1 1/2 cups sugar
4 eggs
1/4 tsp butter flavoring
1 tsp vanilla flavoring
1 tsp almond flavoring
2 1/2 tsp baking powder
1/2 tsp salt
3 cups sifted flour
1 can cherry pie filling
Cream butter and sugar, add eggs and flavoring and mix. Add baking powder, salt and flour and mix again. Pour all but 1 cup of the batter into a greased 15 x 10 pan. Spread cherry pie filling over batter. Put remainder of cake mixture on top in drops (like 6-8 drops). Bake in 350 degree over about 35 minutes.
Cool and then drizzle with following frosting. 1 cup powdered sugar, 1 TBSP water or milk, 1 tsp vanilla.
Enjoy!
